Apricot and Date Bars

You will need:

  • 75g dates, pitted

  • 75g of dried apricots

  • 100ml of water

  • 25g coconut oil

  • 200g rolled oats

  • 100g mixed nuts

  • 50g of sunflower seeds

  • 50g of pumpkin seeds

  • 1/2 tsp of cinnamon

  • 1/2 tsp of vanilla extract

 

How to make:

Preheat the oven to 180°c (fan) and line a 9x9in baking tray.

Pit the dates and add to a bowl with the apricots, water and coconut oil. Pop in the microwave for 60 seconds until the coconut oil as melted, alternatively heat together in a pan until soft.
Blend the date and apricot mixture until puréed. In a separate bowl, add the rest of the dry ingredients and stir together. Add the date & apricot purée to the bowl and stir until completely combined and sticky. Tip into the baking tray and flatten down evenly with the back of a spoon.
Bake for 20 minutes until golden brown. Leave to cool before slicing into bars.

This recipe will make 12 bars or 16 squares.
