Zespri™ SunGold™ Kiwifruit and Tofu Steamed Buns

Ingredients

  • 2 Zespri SunGold Kiwifruit

  • Rainbow carrots, sliced

  • Radish, sliced

  • Coriander

  • 6 pre-made buns for steaming

  • Tofu, either pre-sliced and marinated or smoked

  • Sriracha mayonnaise

  • 1 red chilli, sliced

  • Peanuts, crushed

 

Method

  1. Slice the kiwis and vegetables and roughly tear the coriander.

  2. Cut a circular piece of baking parchment big enough to fully line a steamer.

  3. Over a pan of boiling water place the steamer with the buns inside and cover with the lid for roughly 8 minutes.

  4. While the buns are steaming, fry the tofu in a little oil on a medium heat, turning every so often until crispy.

  5. The buns should have risen and be light and fluffy looking. Remove them from the steamer.

  6. Fill the buns with the sliced vegetables, the tofu and the kiwi. Drizzle in the sriracha mayonnaise and sprinkle with coriander, chilli and peanuts.

  7. Serve immediately.
